Smoked Meatloaf with Garlic Topping

Ingredients

  • 2 lbs ground beef
  • 1 medium onion, finely chopped
  • 1 medium jalapeno, finely chopped
  • 1 tsp chipotle powder
  • 4 TBSP Worcestershire sauce
  • 1 tsp pepper
  • 1 tsp salt
  • ½ tsp liquid smoke
  • Garlic Topping
  • 1 cup ketchup
  • ¼ cup brown sugar
  • 4 TBSP A1 sauce
  • 2 tsp Worcestershire sauce
  • 2 tsp course ground mustard
  • 2 cloves garlic, minced
  • 1 tsp hot sauce
  • salt and pepper to taste

Instructions

  • Mix all ingredients well and form into a long loaf.  Place foil in bottom on pan and place meatloaf on foil.  Bring edges together to form a loose seal.  Cook on 300 for 1½ hours or until juices run clear.  Meanwhile in a small saucepan mix topping ingredients.  Heat to a simmer stirring well.  Reduce heat and cook 10 minutes stirring occasionally.  Pour topping over meatloaf, place meatloaf with topping under broiler for 1 min.
